Boosting Basic Banana Bread Muffins Recipe

Banana Bread is a simple quick bread recipe that is often a gateway to the baking realm. This recipe boosts the basic components by incorporating Ground Flaxseed. Flaxseed is rich in Omega-3 fatty acids that have anti-inflammatory effects. Additionally, the fiber in flax has been found to lower LDL-cholesterol and have a gentle laxative effect. 1 cup AP flour

1/4 cup whole wheat flour

3/4 cup ground flaxseed

2/3 cup sugar

2 tsp baking powder

1/4 tsp salt


2 eggs

1/4 cup skim milk

1/4 cup canola oil

1 cup mashed bananas (3 medium or 2 large ripe bananas)

1/2 tsp vanilla

optional Add-ins: 1/3 cup chopped walnuts and/or 1/3 cup semi-sweet chocolate chips

*preheat oven 350F

*Combine dry ingredients

*in separate bowl, mash bananas and mix in wet ingredients

*combine wet and dry ingredients

*fold in optional toppings if using

*spray muffin or mini muffin pan with nonstick spray

*combine wet and dry ingredients

*bake 36 minutes or until a toothpick inserted in the center comes out clean

*once cooled, freeze leftover muffins in a glass container. thaw at room temperature or microwave.
